I admit it. Too many peppermint oreos before Christmas.
I might not like the scale but they were worth every bite. The thing I rediscovered today was how delicious eating healthy can be. This smoothie is wicked good. No, I’m not from Boston, I just love that saying.
Most green monster smoothies use kale or spinach but instead I thought I would put an Asian spin on this with bok choy, Asian pear, and kumquat.
Matt left for a bike ride this morning, a little doubtful of my smoothie idea. He came home to a sample, “That was amazing!!!” he texted me. Kumquats have a blast of flavor and Asian pears are the perfect smoothie base. All blended up it is an amazing balance and you will be making these again and again.
- 1 Asian Pear, peeled cored and cut into coarse pieces
- 1 large banana, peeled, coarse chopped and frozen previously
- 2 cups bok choy greens
- 1 cup whole kumquats
- 6-7 ice cubes
- 1 tsp ginger (optional)
- Place all ingredients in blender and process for a couple minutes until smooth.
- Pour into glasses, enjoy!!!
