I love cookbooks. I love to hold them. Look at the pictures. Be inspired. I’m a little afraid for the future, if books become too antiquated and we all just use our devices. Yes, I like my devices just as much as the next consumer but I think about libraries growing up, the smell of the old books. Holding my cookbooks. I get a sad at the idea that progress could mean losing these things. Ok I’ll go take off my granny panties now. But is it dangerous that all of the world’s information be stored in a form that hackers could somehow erase in the deep web? I’ve come to learn more of the deep web and hacker groups like Anonymous recently and it is interesting to say the least. So serious. No need for that around here.
I was flipping through one cookbook I have been inspired by, Superfood Smoothies which I highly recommend, lots of amazing ideas. I was surprised when I looked at the strawberry basil smoothies. They had tomatoes. Hmmm. Sneaky. I wondered if it could be good. This is my adaptation. I wanted a little less tomato, more strawberries, more basil, less lime juice, and fewer expensive hard to find ingredients. Matt balked at the idea of basil in smoothies. I promised him it tasted a bit like a virgin daiquiri (it does), with just a little earthy, floral scent and taste from the basil. It passed his approval, and mine. You really don’t taste the tomatoes unless you know they’re in there. They just add a bit of interest and depth.
Light, refreshing, and packed with all kinds of vitamins, it’s a great breakfast or pick me up snack. Enjoy!
- 3 cups frozen strawberries
- 1 cup cherry tomatoes
- 2 Tablespoon chopped basil, packed
- 2 Tablespoons mashed avocado
- 1 cup coconut water
- 1 Tablespoon lime juice
- 1 Tablespoon agave
- Combine all ingredients in a blender. Process until smooth.
